Just purchased Pi Cubed (full version) and am delighted.
Was wondering if the documentation was available, in pdf of text form, outside of the app?

Yes, the application manual should be online in HTML form at this link. The link comes from the "application manual" link on the main product page (which I should make stand out better than I do now).
